GUUBII: Combining Riesling with red wine vinegar is as unusual as it is fascinating and harmonizes in a unique way with GUUBII. Riesling provides the perfect basis for the desired wine character, whose bouquet and body are further condensed when dealcoholized. This makes the wine lighter, can absorb more aromas and express itself elegantly with them, which takes vinegar creation to a whole new level.
The red wine vinegar is made with 11 local herbs, aged in wooden barrels and refined with freshly harvested elderflowers, ripe lemons and natural cane sugar. This is done once a year using traditional, gentle processes and requires a lot of time so that the individual ingredients can combine naturally for over 10 months and then mature.
